- Fresh parsley - a few sprigs (for garnish)
Prep like you mean it
Grab a deep skillet or a wide pot. Finely chop the onion. Grate the carrot on the large holes or slice it into thin matchsticks. Core and dice the bell pepper. Mince the garlic. Slice the sausages into neat 5 mm rounds. Keep the broth hot; it matters for even cooking.
Build the flavor
Warm the olive oil over medium heat. Soften the onion until translucent. Stir in the carrot and bell pepper and cook, stirring, for 3 to 4 minutes.
