From restaurants to home kitchens, a new staple is winning converts with velvety tenderness, vivid aroma, and real nutrition in every serving.

Here is a quick, cozy side that tastes richer than it has any right to, and it might convert the sprout skeptics at your table. Brussels sprouts take a creamy turn with sour cream and fresh dill, clocking in at under 25 minutes and playing nicely with anything grilled, roasted, meaty, or fishy.

What you need

  • Fresh Brussels sprouts - 500 g
  • Sour cream 15% fat - 150 g
  • Fresh dill - small bunch, about 30 g
  • Garlic - 2 cloves
  • Butter - 30 g
  • Salt
  • Ground black pepper - a pinch

How to make it

Step 1: Prep the sprouts. Rinse them well, pull off any damaged outer leaves, and halve the bigger ones so everything cooks evenly. Bring a pot of salted water to a boil, drop in the sprouts, and cook 5 to 7 minutes. You are aiming for tender with a little bite left. Drain thoroughly.

Step 2: Get some color. Melt the butter in a skillet over medium heat. Add the drained sprouts and sauté 3 to 4 minutes, stirring now and then, until you see a light golden edge.

Step 3: Layer the flavor. Finely chop the dill and mince the garlic. Add both to the pan, toss, and warm for about 1 minute so the aroma opens up.

Step 4: Make it creamy. Stir in the sour cream, season with salt and a pinch of pepper, and fold gently so every sprout gets coated. Drop the heat to low, cover, and let it gently simmer 5 to 7 minutes. Keep it shy of a boil so the sour cream stays smooth instead of splitting.

Serve it

Bring it to the table warm as a side or let it be a light standalone dish. It is simple, fragrant, and surprisingly satisfying. If you are feeding the sprout-averse, go ahead and make extra. They will ask for seconds.
