Make-Ahead Beet Salad You’ll Crave All Week—Big-Batch It, Keeps a Week, Perfect With Meat or Bread
Make this once, skip side dishes for five days — the salad that carries your week.
Cook this once and your fridge has a reliable, colorful side for most of the week. This beet-based salad is bright, sturdy, and actually improves after a day or two. The technique is simple, the ingredients are everyday, and the batch is generous — about 1.5–1.7 kg — so it pulls real weight alongside dinners, quick lunches, and snacks.
What you need
- Beets, peeled and either boiled or baked — 1 kg
- Carrots — 200 g
- Yellow onion — 200 g
- Bell pepper — 200 g
- Garlic — 3 cloves
- Tomatoes in their own juice — 3–4 tomatoes plus 100 ml of the juice
or tomato paste — 2 tbsp + water — 100 ml - Neutral vegetable oil — 50 ml
- 9% vinegar — 2 tbsp
or apple cider vinegar — 2.5 tbsp - Sugar — 1/2 tsp
- Salt — 1/2 tsp (or a touch more, to taste)
- Freshly ground black pepper — to taste
Get the beets right
Baking brings out the best in beets — sweeter flavor and a firmer bite. Wrap each beet in foil, shiny side facing inward, and roast at 200°C. Small ones take about 50–60 minutes, large ones about 1 hour 20 minutes. Let them cool, then slip off the skins. Boiled beets work too, but the baked version wins on texture and taste.
Prep the rest
Grate the carrots on a Korean-style shredder (or a coarse julienne). Finely chop the onion and garlic. Slice the bell pepper into thin strips. Peel the tomatoes and blitz them with their juice into a smooth puree. If you are using tomato paste, loosen it with the 100 ml water so it pours like a sauce.
Build it on the stove
Heat the oil in a deep skillet. Soften the onion for 2–3 minutes, stir in the garlic, then add the carrot and cook until it starts to relax. Toss in the pepper and give it another 2–3 minutes. Add the beets (grated or cut into small cubes) and mix everything well.
Pour in the tomato puree. Season with the salt, sugar, black pepper, and vinegar (2 tbsp of 9% vinegar or 2.5 tbsp apple cider vinegar). Let it all simmer together for 5–7 minutes so the flavors lock in.
Cool, stash, enjoy all week
Spoon the hot salad into a sterilized jar if you want to hold it longer, or into a regular container for near-term eating. Cool to room temperature, then refrigerate. It keeps beautifully for several days and tastes even better on day two or three as the vegetables drink up the dressing.
