Why these are different

Instead of baking powder or soda, the lift comes from properly whipped egg whites. Folded into a simple yolk-flour-sugar base, the batter puffs as it cooks, so the pancakes come out tall, lightly crisped on the outside, and tender and porous inside.

What you need

  • Eggs — 2
  • All-purpose flour — 3 tablespoons
  • Sugar — 2 tablespoons
  • Salt — a pinch
  • Lemon juice — 1 teaspoon
  • Vegetable oil for frying

How to make them

Separate the eggs. In one bowl, whisk the yolks with the sugar until the mixture looks lighter and a bit creamy. Add the flour and mix until smooth.

In a clean bowl, beat the egg whites with the salt and lemon juice until you get a firm, glossy foam that holds its shape.

Gently fold the whites into the yolk mixture with a spatula, moving from the bottom up so you don’t knock out the air.
