What you need

  • Cabbage — 500 g, finely shredded
  • Kefir — 400 ml
  • Flour — 300 g
  • Egg — 1
  • Onion — 1, finely chopped
  • Carrot — 1, coarsely grated
  • Salt — 1.5 tsp
  • Baking soda — 1 tsp
  • Vegetable oil — for frying

How I make them

Start with the veg

Warm a little oil in a skillet and cook the chopped onion until it turns soft and translucent. Stir in the grated carrot and let it go a couple of minutes. Add the finely shredded cabbage, sprinkle lightly with salt, cover, and let it stew until tender. Take it off the heat and let the mixture cool.

Mix the batter

In a bowl, whisk together the kefir, egg, salt, and baking soda. Add the flour and stir until you have a thick, spoonable batter.

Combine and fry

Fold the cooled cabbage mixture into the batter so everything is evenly coated. Heat a thin slick of oil in a nonstick skillet over medium heat. Spoon in portions of batter, cover the pan, and cook until the bottoms are golden. Flip and cook the other side to the same golden finish. Serve hot and enjoy that soft center with the crisp, ruffled edges.
