Crispy fries plus melted cheese is an easy way to make a rough day better. Enter poutine, Quebec's cult comfort food that won over the rest of the world for one simple reason: it is pure, unapologetic pleasure. Think crunch, stretch, and a glossy gravy that ties it all together. It is ideal for a cozy night in or a low-key hang with friends. Hearty. Simple. Extremely satisfying.

What you need

  • Potatoes - 800 g (about 4–5 large)
  • Cheese curds (mild cheddar curds or a cheese made for poutine) - 200 g
  • Beef or chicken broth - 500 ml
  • All-purpose flour - 1 tbsp
  • Unsalted butter - 30 g
  • Garlic - 2 cloves, minced
  • Bay leaf - 1
  • Salt - 1/2 tsp, or to taste
  • Ground black pepper - a pinch
  • Neutral oil for frying - 300–400 ml

How to make it

Start with the gravy. Melt the butter in a small saucepan over medium heat. Sprinkle in the flour and cook, stirring, for 1–2 minutes until it turns lightly golden. Gradually pour in the warm broth, whisking constantly so it stays smooth. Stir in the minced garlic, the bay leaf, the salt, and the pepper. Drop the heat and let it gently bubble for 5–7 minutes until it thickens. Take it off the heat and keep it covered so it stays warm and silky.

Now, the fries. Peel the potatoes and cut them into batons about 1 cm thick. Rinse them well under cold water, then dry them thoroughly with paper towels. Dry potatoes crisp up beautifully. Heat the oil in a deep skillet or a fryer to 180°C. Fry the potatoes in batches until golden, about 5–6 minutes per batch. Move them to paper towels to drain and salt them right away.

Time to stack. Grab a big plate or a sharing platter. Scatter on a layer of hot fries, shower them with cheese curds, and spoon over some warm gravy so the cheese begins to soften and stretch. Build a second round: fries, curds, gravy.

Serve immediately while the fries stay crunchy and the cheese is melty and elastic. This is comfort food that rewards zero hesitation.
