What you need

  • Batter: warm kefir, cultured milk, or soured milk — 500 ml
  • Batter: egg — 1
  • Batter: salt — 1 tsp
  • Batter: sugar — 1 tsp
  • Batter: butter, melted — 30 g
  • Batter: baking soda — 1 tsp (quenched with vinegar)
  • Batter: flour — 450 g (about 3.5 cups), sifted
  • For frying: neutral vegetable oil
  • Filling: boiled eggs — 4

Make the filling

Chop the boiled eggs into small cubes. Finely slice the green onion and herbs. Combine everything in a bowl and set aside.

Mix the batter

In a bowl, whisk the warm kefir or soured milk with the salt and sugar. Add the egg and the melted butter and mix until smooth. Quench the baking soda with a little vinegar, then stir it in. Add the sifted flour and stir to a thick, smooth batter — you are aiming for the consistency of heavy sour cream.

Combine and rest
