What you need

  • Potatoes - 800 g
  • Hard cheese - 150 g, grated
  • Milk - 200 ml
  • Eggs - 2
  • Butter - 50 g, plus extra to grease the dish
  • Salt - 1/2 tsp or to taste
  • Black pepper - a pinch
  • Nutmeg - a pinch, optional
  • Fresh dill or parsley - a few sprigs, for serving

How to make it

Step 1: Prep the potatoes. Peel and slice them into thin rounds about 2–3 mm thick. Thin slices matter; they cook through and stay tender. In a bowl, whisk the eggs and milk with the salt, pepper, and nutmeg until smooth. This mix keeps the casserole plush instead of stodgy.

Step 2: Grease a baking dish with butter. Lay down a snug layer of potato slices, slightly overlapping. Scatter a little grated cheese. Repeat the layers until everything is used, keeping the final layer just potatoes. That top of exposed slices is your golden, bubbly finish line.

Step 3: Pour the egg-and-milk mixture evenly over the potatoes so it seeps into the layers. Dot the surface with small pieces of butter for extra aroma and that glossy, browned top.

Step 4: Heat the oven to 180°C. Bake for 45–50 minutes, until the potatoes are tender and the surface is well browned. Check doneness with a fork; it should glide in easily.

Step 5: Let it rest 5–10 minutes so it sets and slices cleanly. Finish with finely chopped dill or parsley.

How to serve it
