Crack the foolproof fry for melt-in-your-mouth chicken strips — and whip up three 5-minute sauces to match.

If you want chicken tenders that actually crunch and stay juicy, this is the playbook. The coating shatters, the meat stays tender, and the sauces take five minutes. You do a couple of small things right, and it tastes like you deep-fried your way into a restaurant kitchen.

What you need

  • Chicken breast fillets - 500 g, sliced into long strips about 1–2 cm thick (or buy pre-cut tenders)
  • Eggs - 2–3
  • Breadcrumbs (panko is ideal) - about 150–200 g
  • Flour - 100 g (optional, for a double breading)
  • Spices to taste: salt, black pepper, paprika, garlic powder, dried herbs

The game plan

Prep the chicken

Slice the fillets into long 1–2 cm strips. For extra tenderness, lightly tap each strip with the back of a knife. Combine your spices in a small bowl, rub them all over the chicken, and let the strips sit for 15–20 minutes at room temperature.

Choose your crunch

Light and crisp: Beat the eggs in one bowl. In a second bowl, season the breadcrumbs. Dip each strip in egg, then coat generously in the crumbs.

Max crunch, restaurant-style: Set up three bowls: 1) flour seasoned with your spice mix, 2) beaten eggs, 3) seasoned breadcrumbs. Dust chicken in flour and shake off excess, dip in egg, then press firmly into the crumbs. For an even bigger crunch, repeat the egg-and-crumb step for a double layer. Stir 1–2 tbsp cornstarch into the breadcrumbs to boost crispness and give the crust a lighter, airier texture.

Fry like you mean it

Heat about a 1 cm layer of vegetable oil in a deep skillet to roughly 180°C. No thermometer? A pinch of flour should hit the oil, sizzle right away, and bubble steadily. Work in small batches so the strips stay separate. Fry 2–3 minutes per side until the coating turns a deep golden and sounds crisp when nudged with tongs.

Serve it hot

Move the finished tenders to paper towels to wick away excess oil, then serve immediately with your favorite sauces.

Fast sauces that make it a meal

Blue cheese dip: Stir together buttermilk or thick yogurt, sour cream, crumbled blue cheese, and a small splash of vinegar.

Honey mustard: Mix mayo with wholegrain or classic mustard, honey, and a squeeze of lemon juice.

Spicy: Blend mayo with hot sauce (think Sriracha) and a touch of soy sauce.

Classic: Ketchup, BBQ sauce, or ranch always deliver.

Secrets for shatter-crisp crust and tender meat

Paprika and garlic pull double duty: Paprika adds color and helps the coating crisp; granulated garlic deepens the flavor.

The protein 'coat' trick: Separate the eggs. Stir the yolks into your spice rub to turn it into a quick marinade. Beat the whites with a pinch of salt until foamy, then dip the chicken in the whites before breading. The result is a lighter, remarkably crisp shell.

Locked-in juiciness: Pat the chicken dry with paper towels before it meets the coating and oil. Cook to a rich golden and pull it the moment the crust looks perfect.

Let the crust set: After breading, rest the strips for 5–10 minutes. The coating adheres better and fries up cleaner.

Make a batch like this once, and these tenders start showing up in your weeknight rotation and on game-day platters. They disappear fast; plan accordingly.
