Spring’s hottest condiment is a dill-forward sauce sharpened with mustard and lemon, surging onto menus and into home kitchens.

File this under sauces that refuse to be background noise. I stumbled on a dill-mustard-lemon situation that instantly turned into the house favorite. Put a bowl on the table and it vanishes faster than ketchup. The flavor is bright with dill, lifted with lemon, and just sharp enough from mustard to keep everything interesting. It works across the board: meat, fish, potatoes, salads, or straight up with warm bread. Make it once and it will keep showing up in your rotation.

What you need

  • Dill — 300 g (use the tender sprigs only)
  • Lemon — 1 whole lemon (you will use the zest and the juice)
  • Olive oil — 3 tbsp
  • Mustard — 3 tbsp (brings the bite)
  • Garlic — 1–2 cloves
  • Greek yogurt — 150 g (for body and creaminess)
  • Salt and black pepper — to taste

How to make it

Prep the dill first: rinse thoroughly and pat completely dry. Strip away the thick stems and keep the soft, feathery parts.

Into a blender goes the prepped dill, the zest from the entire lemon, and the juice from half of it. Add the olive oil, mustard, garlic pressed through a garlic press, Greek yogurt, plus salt and pepper to taste.

Blend until the texture turns thick and smooth. That is your sauce, done.

Serve it like you mean it

Spoon it next to grilled meat, slide it alongside baked fish, toss it through warm boiled potatoes, or use it to wake up a salad. It also happens to be dangerously good with fresh bread.

Right before serving, add a little extra lemon juice if you want more tang, or scatter over a pinch of fresh herbs for color.

Storage

Keep the sauce in an airtight container in the fridge. The flavor holds beautifully and the texture stays lush.
