Craving something crunchy that does not involve a vat of oil? These oven-baked potato sticks scratch the fries itch and vanish fast. You get a crackly, golden coat and a soft, fluffy center, with way less effort than deep-frying. Family-pleaser status: guaranteed.

What you need

  • Potatoes — 600 g (about 5–6 medium)
  • Salt — 1/2 tsp
  • Vegetable oil — 2–3 tbsp
  • Breadcrumbs — 3 tbsp
  • Dried garlic — 1 tsp
  • Sweet paprika — 1/2 tsp
  • Black pepper and dried basil — to taste

How to make it

Cut the potatoes into even sticks. Think classic fries shape, just a touch thicker so the centers stay fluffy.

In a big bowl, toss the potatoes with salt, dried garlic, sweet paprika, black pepper, and dried basil so the seasoning hits every surface.

Add the oil and toss again until glossy and evenly coated.

Sprinkle in the breadcrumbs and mix once more. You want a light, even breadcrumb jacket on every piece.

Spread the potatoes in a single layer on a parchment-lined baking sheet. Greasing the sheet is optional with parchment.

Bake at 200°C (about 400°F) for 20–30 minutes, depending on how audibly crisp you want that crust. Start checking at 20 minutes; go toward 30 for extra crunch and deeper color.

Why this works

Potato choice matters. Yellow-fleshed varieties tend to bake up fluffier inside, while white types skew drier. Go yellow for that tender, steamy middle.
