When I want something salty, crunchy, and genuinely satisfying while keeping dinner on track, I reach for cauliflower. A quick toss in seasoned flour and a shallow fry turns humble florets into golden, crisp-edged bites with a soft, tender middle. It is simple, budget-friendly, and it behaves however you need it to: side dish, snack, or a little of both.

What you need

  • Cauliflower - 1 head (about 800-900 g)
  • Wheat flour - 4 tbsp
  • Salt - 1/2 tsp, or to taste
  • Ground black pepper - a pinch
  • Sweet paprika (optional, for aroma) - 1/2 tsp
  • Neutral oil for frying - 3-4 tbsp
  • Fresh herbs (dill, parsley) - a few sprigs for serving

How to make it

Break the cauliflower into medium florets so they cook evenly. Rinse under running water and pat completely dry with paper towels. Oversized florets can be cut into smaller pieces for even browning.

In a shallow bowl, combine the flour, salt, black pepper, and paprika. Drop in the florets one at a time and coat thoroughly, making sure every nook gets a light dusting. Shake off any excess so the crust fries up crisp.

Warm a skillet over medium heat and add the oil. Once the oil is hot, arrange the coated florets in a single layer. Keep the pan roomy so the cauliflower fries instead of steams. Cook for 3-4 minutes per side, until each piece turns a deep golden brown. Flip gently to preserve that delicate flour crust.

Transfer the fried florets to a plate lined with paper towels to pull off extra oil. While they are still hot, scatter over finely chopped dill or parsley for a fresh, aromatic finish.

Bring it to the table hot. It pairs cleanly with meat or fish, and it also works solo with a dip on the side: sour cream, a garlicky sauce, or a simple tomato dip all make sense here.
