Craving something warm, golden, and unapologetically cheesy? These savory breakfast pancakes hit all the pleasure points: crisp edges, a soft middle, melty cheese strands, and a little bite from good sausage. They cook as easily as your standard pancakes, but feel like a minor celebration. If you can whisk, you can nail these.

What you need

  • 250 g all-purpose wheat flour
  • 300 ml kefir (2.5% fat)
  • 1 egg
  • 0.5 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 2 tbsp neutral vegetable oil for the batter, plus a little more for the pan
  • 100 g boiled or cooked-smoked sausage
  • 80 g hard cheese
  • Small bunch fresh herbs (dill or parsley), optional

How to make them

Step 1: Batter base. In a roomy bowl, whisk the egg with the sugar and salt until smooth. Pour in the kefir and whisk again until evenly combined.

Step 2: Bring it together. Sift in the flour gradually, whisking as you go so the batter stays lump-free. Stir in the 2 tbsp of oil. Quench the baking soda with a splash of vinegar or lemon juice, then fold it into the batter. That little reaction sets you up for fluffier pancakes. Let the batter rest for 10–15 minutes at room temperature.

Step 3: Prep the mix-ins. While the batter chills out, cut the sausage into small cubes. Coarsely grate the cheese. If you are using herbs, finely chop them.

Step 4: Load it up. Fold the sausage, cheese, and herbs (if using) into the batter so everything is evenly dispersed. You want a scoop to have a bit of everything.

Step 5: Fry time. Warm a skillet over medium heat and lightly grease it with oil. Honestly, a light film before the first batch is usually enough. Spoon batter onto the pan, forming small pancakes. Cook 2–3 minutes per side until they are burnished and golden.
