If breakfast needs to be fast, satisfying, and a little indulgent, these hot mushroom, salami, and cheese toasts deliver. They come together in minutes, smell amazing, and hit that perfect balance of savory, melty, and crisp. I like them for a quick morning bite, a late-day snack, or as a warm side to a bowl of soup.

What you need

  • Bread (baguette, toast, or whole grain) — 6 slices
  • Fresh button mushrooms — 150 g
  • Salami — 80 g
  • Hard cheese — 100 g
  • Onion — about 40 g
  • Unsalted butter — 30 g
  • Garlic — 1 clove
  • Fresh dill — a few sprigs
  • Salt — a pinch, as needed
  • Freshly ground black pepper — a pinch

How to make it

1. Build a flavorful base. Peel and finely chop the onion. Wipe the mushrooms with a damp paper towel to remove any grit, then slice them thinly. Melt half the butter in a skillet over medium heat. Add the onion and mushrooms, season with a pinch of salt and pepper, and sauté for 5–7 minutes until the excess moisture cooks off and the mushrooms pick up a light golden color. Transfer to a plate to cool slightly.

2. Prep the rest. Slice the salami thinly or cut it into small cubes so it spreads evenly. Coarsely grate the cheese. Finely chop the dill. Press or mince the garlic. Stir the cooled mushrooms with the dill and garlic.

3. Assemble. Butter one side of each bread slice with the remaining butter. Spoon the mushroom mixture onto the buttered sides, add the salami, and shower everything with a generous layer of grated cheese.

4. Bake. Arrange the toasts on a baking sheet. Heat the oven to 180°C. Bake for 8–10 minutes, until the cheese melts and turns lightly golden. Keep an eye on the edges so the bread stays nicely toasty.

Serve it right

Bring them to the table hot while the cheese stretches and the kitchen still smells like you meant to impress. They play well with a simple vegetable salad, a glass of tomato juice, or a comforting cup of tea.
