Budget-Friendly Deviled Eggs With a Savory Fish Twist That Steal the Show
Easy to cook, a joy to serve, impossible to resist — the latest home-cooking wave is sweeping kitchens nationwide and rewriting the weeknight menu.
When guests are on the way and the fridge is giving minimalist vibes, stuffed eggs with canned fish rescue the situation fast. They are affordable, quick, and strangely elegant for something you can pull off between playlists. Soft egg whites carry a creamy, zippy filling, and you can tweak the add-ins each time so the flavor never feels stuck in a rut.
What you need
Eggs 6; oil-packed fish 1 can (200 g) such as saury, sardine, or tuna; fresh cucumber 1 small; green onion 2-3 stalks; mayonnaise 2 tbsp; plain mustard 1 tsp; salt a pinch; freshly ground black pepper a pinch; fresh dill a few sprigs for garnish.
How to make it
- Cook the eggs: Set the eggs in a saucepan, cover with cold water, bring to a boil, then simmer 8-9 minutes. Move them straight into cold water so the shells release easily. Cool, peel, and slice lengthwise. Gently pop out the yolks into a bowl.
- Prep the filling base: Tip the canned fish into a plate, drain off extra oil, and mash with a fork until smooth. Finely chop or finely grate the cucumber, then press out excess moisture. Thinly slice the green onions. Finely chop the dill and keep it ready for garnish.
- Mix it: Add the mashed yolks, fish, cucumber, green onion, mayonnaise, and mustard to a bowl. Mash with a fork until creamy or give it a quick pulse in a blender for a smoother finish. Season with the pinch of salt and the pinch of black pepper; aim for a bright, balanced taste.
- Fill and finish: Spoon the mixture back into the egg white halves, or use a piping bag with a wide tip (a zip bag with the corner snipped looks extra neat). Arrange on a platter and garnish with dill sprigs. Chill before serving.
Serve it up
Set the eggs on a tray, tuck in those dill sprigs, and serve cold. They play nicely with crisp toast, fresh vegetables, and a handful of greens. Expect 12 halves to vanish faster than you planned.
