Bottle Summer With a Luscious Homemade Strawberry Liqueur—No Preservatives, Just Real Berry Flavor

Move over takeout: a five-ingredient, one-pan crowd-pleaser is taking over cozy nights and last-minute get-togethers.

If summer had a house pour, this would be it. Homemade strawberry liqueur: fragrant, gently sweet, soft around the edges, and blissfully free of mystery additives. You control the sugar, you control the kick. It is easy, it just asks for a little patience while it infuses.

What you need

  • Fresh strawberries - 500 g
  • Vodka (or diluted neutral spirit) - 500 ml
  • Sugar - 300 g
  • Water - 250 ml
  • Citric acid - 1/4 tsp (or the juice of 1/2 lemon)

How to make it

1. Prep the berries: sort, hull, and rinse the strawberries. Let them dry off, then tip them into a 1-liter jar. Give them a light mash with a muddler so they release more juice. Pour in the vodka until the fruit is fully covered. Seal the jar and leave it at room temperature, in a dark spot, for 7-10 days. During this time the alcohol pulls in the strawberry color and aroma.

2. While that infuses, cook a quick syrup. Combine the sugar and water in a saucepan and bring to a boil over medium heat, stirring until the sugar dissolves. Let it simmer for 2-3 minutes, take it off the heat, and cool to room temperature. Stir in the citric acid or the juice of half a lemon to balance the sweetness with a light tang.

3. Strain the strawberry infusion through a fine sieve or cheesecloth, pressing the berries well to extract every last drop. Mix the strained liquid with the cooled syrup until fully blended. Pour the liqueur into clean glass bottles and close them tightly.

4. Let the bottles rest in a cool, dark place for 2-4 weeks. This little pause smooths everything out and rounds the flavor. Chill before serving.

How to serve it

Pour it in small liqueur glasses as a digestif, or work it into bright-weather cocktails. It gets along especially well with tonic, sparkling wine, and even a scoop of ice cream. Consider this your bottled slice of summer.
