What you need

  • Apples - 2 medium
  • All-purpose flour - 150 g
  • Eggs - 2
  • Milk - 100 ml
  • Sugar - 50 g (or to taste)
  • Butter, melted - 50 g
  • Baking powder - 1 tsp
  • Ground cinnamon - 0.5 tsp (optional)
  • Vanilla sugar - 1 tsp
  • Salt - a pinch
  • Neutral oil - for greasing the waffle iron

How to make it

1) Prep the apples. Peel, core, and either dice them small or run them over the coarse side of a grater. A quick spritz of lemon juice keeps the color bright.

2) In a mixing bowl, whisk the eggs with the sugar and vanilla sugar until lightly foamy. Pour in the melted butter and milk, then whisk smooth.

3) In a separate bowl, combine the flour, baking powder, cinnamon (if using), and a pinch of salt. Fold the dry mix into the egg-milk mixture gradually, mixing just until the batter looks even and lump-free.

4) Stir in the apples so they are evenly spread through the batter. Let the batter rest for 5–10 minutes. That short pause gives the flour time to hydrate and rewards you with a softer, airier waffle.

5) Heat the waffle iron and lightly grease the plates with a little neutral oil. Spoon in the batter in modest portions (about 2–3 tbsp per waffle), close, and cook until the waffles turn a deep golden color, about 3–4 minutes. Serve it like this
