What you need

  • Canned beans (white or red) — 200 g
  • Anchovies in oil — 5–6 fillets (about 30 g)
  • Cherry tomatoes — 150 g (about 10 pieces)
  • Fresh cucumber — 1 (about 120 g)
  • Red onion — about 40 g
  • Pitted olives — 50 g
  • Olive oil — 2 tbsp
  • Lemon juice — 1 tbsp
  • Fresh basil — a few leaves
  • Salt — to taste (you may skip it; anchovies carry salt)
  • Ground black pepper — a pinch

How to make it

Step 1: Prep the fresh stuff. Halve the cherry tomatoes. Slice the cucumber into thin half-moons or sticks. Slice the red onion into thin half-rings; if it tastes too sharp, pour boiling water over it for 30 seconds, then rinse with cold water. Leave the olives whole or halve them. Tear the basil leaves into chunky pieces.

Step 2: Build the bowl. Rinse the canned beans and add them to a large bowl with the tomatoes, cucumber, onion, and olives. Chop the anchovy fillets into 2–3 pieces, or leave them whole if they are small, and add them to the bowl.

Step 3: Dress it. In a small cup, whisk together the olive oil and lemon juice with a fork until it looks unified. Pour it over the salad and toss gently so the vegetables stay intact. Taste and season with a little salt if needed (anchovies already bring plenty) and add a pinch of black pepper.

Step 4: Let it settle. Give the salad 5 minutes at room temperature so the flavors relax into each other.

Serve it right

Serve slightly chilled or at room temperature with a few fresh basil leaves on top. It pairs beautifully with crusty bread or simple flatbreads. Simple, substantial, and exactly the kind of salad that does more than its ingredient list suggests.
