What you need
- Apples, tart-sweet — 2 medium (about 300 g)
- Celery stalks — 3 (about 150 g)
- Seedless red grapes — 100 g (green grapes work too)
- Walnuts, shelled — 50 g
- Light mayonnaise — 2 tbsp
- Plain unsweetened yogurt — 2 tbsp
- Lemon juice — 1 tbsp
- Fine salt — a pinch
- Freshly ground black pepper — a pinch
How to make it
Prep the produce first. Rinse and dry the apples, core them, then cut into thin wedges or small cubes. Toss immediately with the lemon juice so the pieces stay bright. Rinse and dry the celery, then slice it into thin half-moons or matchsticks for maximum crunch. Leave the grapes whole, or halve them if they are on the larger side. Toast the walnuts in a dry skillet over medium heat for 2-3 minutes, stirring often until fragrant. Let them cool slightly, then chop them coarsely.
In a large bowl, combine the apples, celery, grapes, and walnuts. For the dressing, stir together the light mayo and plain yogurt, then season with a pinch of salt and a pinch of black pepper. Spoon the dressing over the salad and fold gently so the fruit and veg keep their shape.
