Baking keeps a lot of the good stuff intact, and the sweetness comes from honey instead of refined sugar. Ideal with a mug of tea on a chilly night or as a light afternoon snack.

What you need

  • 4 large apples (tart-sweet varieties shine here, think Antonovka or Granny Smith)
  • 4 tbsp runny honey (about 1 tbsp per apple)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger, optional, for a little kick
  • 2 tbsp chopped walnuts (almonds or hazelnuts also work)
  • 2 tbsp seedless raisins, optional
  • 20 g unsalted butter, cut into 4 small pieces (about 5 g per apple)

Set up the apples

Heat the oven to 180 C. Rinse and dry the apples. Slice off the top 1–1.5 cm to make a little lid for each one. Use a teaspoon or corer to scoop out the core and seeds, keeping the base and sides intact so you end up with neat apple cups.

Mix, fill, and flavor

Stir together the chopped nuts and raisins; add the ground ginger if you want that gentle warmth. Spoon the mixture into the hollowed apples without packing it too tightly. Set a small piece of butter on top of each filling so the centers turn tender and aromatic as they bake. Drizzle about 1 tbsp honey over each apple, letting some run inside and a little over the edges. Dust the tops with cinnamon and pop the lids back on.

Bake to soft perfection

Nestle the apples in a baking dish. Pour 2–3 tbsp water into the bottom of the dish to prevent scorching and create a light steam that helps them cook evenly. Slide into the oven and bake for 25–35 minutes, depending on apple size and variety. You are aiming for soft but still holding shape. A toothpick should glide in easily.

Serve it right

Bring them to the table warm. A scoop of vanilla ice cream is classic; a spoon of thick sour cream also plays surprisingly well with the honey and spice.
