It lands with a dense, satisfying crumb, a crisp, toasty crust, and that deep, homey flavor you want alongside soup, cheese, or a clean salad. It sits well with sensitive digestion and anyone watching their ingredients. No preservatives, no odd extras — just straightforward, natural stuff — and the smell while it bakes makes the whole place feel warmer.

What you need

  • Whole wheat flour - 300 g
  • White wheat flour (finely milled) - 200 g
  • Kefir 2.5% - 400 ml
  • Baking soda - 1 tsp
  • Fine salt - 1 tsp
  • Honey - 1 tbsp (or sugar - 1/2 tbsp)
  • Flax seeds - 1 tbsp (optional)
  • Sunflower seeds - 1 tbsp (optional)
  • Olive oil - 1 tbsp, for greasing the pan

How to make it

1. Dry mix, with texture in mind: In a large bowl, whisk together both flours, the salt, and the baking soda until the soda is evenly distributed. If you want more bite and nutrition, stir in the flax and sunflower seeds so they are spread through the mix.

2. Stir in the tang: In a separate bowl, combine the kefir and honey (or sugar) and whisk lightly until smooth. Pour this into the dry ingredients gradually, stirring as you go. You are aiming for a soft, slightly tacky dough, not a stiff ball. If it feels on the dry side, add 1 to 2 extra tablespoons of kefir.

3. Shape and set up: Form the dough into a round loaf. Grease your baking pan with the olive oil, dust it lightly with flour, and settle the dough in. Sprinkle a few seeds on top if you want a more rustic crust. Score a shallow cross across the top — this helps it open up and bake evenly.

4. Let it relax: Cover with a clean kitchen towel and rest at room temperature for 20 to 30 minutes. The dough will swell a touch and feel lighter to the touch.

5. Bake to golden: Heat the oven to 180 C. Bake the loaf for 40 to 45 minutes, until the crust is richly golden. Check doneness with a wooden skewer inserted into the center; it should come out dry.
