This Regal Shrimp Caesar Is the Elegant Showstopper Your Party Needs

Need a light dinner that still feels a bit dressed up? Make this Shrimp Caesar. It cooks fast, looks polished, and hits that perfect crunch-creamy-salty balance. Great for a weeknight, totally fine for company. Here is the version that keeps the croutons crisp, the shrimp tender, and the dressing classic without getting fussy.

What you need

Shrimp, peeled - 250 g. Romaine lettuce - 150 g (about 1 small head). Cherry tomatoes - 150 g (about 10-12). Parmesan - 50 g. White bread for croutons - 150 g. 1 garlic clove. Olive oil - 3 tbsp total. 1 egg. Dijon mustard - 1 tsp. Lemon juice - 1 tbsp. Worcestershire sauce - 1/2 tsp. Salt to taste. A pinch of freshly ground black pepper.

How to make it

  1. Croutons first. Cut the bread into small cubes. Warm 1 tbsp olive oil in a skillet over medium heat. Add the pressed garlic and let it perfume the oil for about 30 seconds. Toss in the bread cubes and toast, stirring, until golden and crisp. Move to a plate to cool.
  2. Cook the shrimp. Drop them into boiling salted water and simmer 2-3 minutes, just until they turn pink and opaque. Drain and let them cool. If they are large, slice them in half lengthwise.
  3. Whisk the dressing. In a small bowl, beat the egg. If you prefer it slightly set, dip the whole egg in boiling water for 1 minute before cracking. Whisk in the Dijon, lemon juice, Worcestershire, a pinch of salt, and a pinch of black pepper. Slowly stream in the remaining 2 tbsp olive oil while whisking until the dressing looks smooth and glossy.
  4. Build the salad. Rinse and thoroughly dry the romaine, then tear it into big, biteable pieces and add to a large bowl. Add the cherry tomatoes (halve them if you like), the cooled croutons, and the shrimp. Spoon over the dressing and toss gently so the leaves stay fluffy and the croutons keep their edges.
  5. Finish with cheese. Shave the Parmesan into thin ribbons or coarsely grate it. Scatter over the top right before serving.

Serve it now

Take it straight to the table while the croutons are still snappy and the shrimp are soft and sweet. Simple, a little luxe, and exactly the right kind of familiar.
