This Crunchy Crab Salad Twist Will Steal the Show at Your Next Get-Together

If the usual crab salad feels a little too expected, here is the glow-up: same familiar flavor, brand-new texture. We toss in potato chips at the last minute for a crisp snap that makes the whole thing feel party-ready. It looks polished, takes minutes, and is the sort of dish that has people asking for the recipe by the second bite.
What you need
- 200 g crab sticks (imitation crab), thawed if frozen
- 3 hard-boiled eggs
- 1 fresh cucumber
- 1 can canned corn (about 200 g), drained
- 50 g firm cheese
- 60-70 g plain potato chips (classic, no heavy seasonings)
- 3-4 tbsp mayonnaise, or to taste
- Salt
- Freshly ground black pepper
- A few dill sprigs for garnish
How to make it
Start with the basics. Cut the crab sticks into small cubes. If they were frozen, thaw first and gently squeeze out any extra moisture so the salad stays perky.
Boil the eggs hard for 8-10 minutes once the water hits a rolling boil. Cool them down, peel, and dice to roughly match the crab pieces. Same size means a better bite.
Wash and dry the cucumber. If the skin tastes bitter, peel it. Dice it small. If it sheds a lot of juice, give it a very light squeeze so the salad does not water down.
Coarsely grate the cheese. Tip the corn into a sieve and let the liquid drain off completely.
In a large bowl, combine the crab, eggs, cucumber, corn, and cheese. Add the mayonnaise with a small pinch of salt and a few twists of black pepper. Fold everything together gently. The goal: coated, not crushed.
Right before serving, break the potato chips by hand into chunky pieces about 1-2 cm and fold them into the salad. Timing matters here; adding them late keeps that craveable crunch. And yes, stick with plain chips. Strong flavors will hijack the whole bowl.
To serve
Spoon the salad into a nice serving bowl or plate it individually. Finish with a few sprigs of dill on top. It plays well with toast, crispbreads, or stands perfectly fine on its own when you just want a quick win.
