If you want something fast, flavorful, and weeknight-forgiving, this squid and egg fried rice delivers. It has that Asian street-stall energy without the travel, leans on day-old rice, and happens in one pan. Translation: real-life friendly, with a satisfying finish.

What you need

Cooked rice, preferably yesterday's - 300 g. Squid, fresh or fully thawed if frozen - 200 g. Eggs - 2. Soy sauce - 2 tbsp. Green onions - 3 to 4 stalks. Garlic - 2 cloves. Vegetable oil - 2 tbsp. Toasted sesame seeds - 1 tsp for serving. Ground black pepper - a pinch. Salt - to taste.

How to make it

  1. Prep first. Clean the squid, rinse, and slice into thin strips. Rinse and finely chop the green onions. Peel and mince the garlic. If the squid was frozen, let it thaw completely and squeeze out any excess moisture.
  2. Heat a deep skillet or wok over medium heat and add the oil. Fry the minced garlic for 30 to 40 seconds until fragrant, keeping it pale and not browned. Add the squid and stir-fry for 2 to 3 minutes until just tender and opaque.
  3. Push the squid to one side of the pan. Crack the eggs into the empty space and scramble them right away so they form soft curds. Once set, fold the eggs into the squid.
  4. Add the cooked rice. Gently break it up and mix it through. Pour in the soy sauce, add a pinch of black pepper, and salt only if needed - the soy is already salty.
  5. Stir-fry everything together for 3 to 4 minutes, tossing now and then so the rice warms through and soaks up the aroma. Finish with the chopped green onions and a sprinkle of toasted sesame seeds.
