I love a plate that looks styled within an inch of its life and takes, what, five minutes to pull off. That is Caprese in a nutshell: the Italian classic that proves a few perfect ingredients can carry the whole show. Fresh tomatoes, creamy mozzarella, peppery basil, a glossy pour of extra virgin olive oil, and a little balsamic. Light, clean, and quietly festive. Great for a summer lunch or next to a glass of wine before dinner.
What you need
- Fresh tomatoes, preferably Oxheart variety - 3 medium
- Mozzarella (small balls or a whole piece) - 200 g
- Fresh basil - 1 bunch, about 20 leaves
- Extra virgin olive oil - 2 to 3 tbsp
- Balsamic vinegar - 1 tbsp, or to taste
- Sea salt - a pinch
- Freshly ground black pepper - a pinch
How to make it
Step 1: Prep like you mean it. Rinse the tomatoes and basil, then pat them dry with paper towels so the dressing clings. Slice the tomatoes into neat rounds about 5 mm thick. Using mozzarella balls? Keep them whole for a chunkier look or halve them. Working with a whole piece? Slice it to match the tomato thickness. Clean cuts make pretty layers, and pretty layers taste better. Science-adjacent.
Step 2: Build the plate. On a wide serving platter, alternate tomato and mozzarella in a slightly overlapping pattern, snug and a little dramatic. Tuck fresh basil leaves between the layers so you get that pop of green in every bite.
Step 3: Finish with the good stuff. Season with sea salt and black pepper. Drizzle extra virgin olive oil in a thin, even stream, then add the balsamic. Go classic with a few droplets or sketch a fine crosshatch if you are feeling artsy. Let the salad rest at room temperature for 5 to 10 minutes. The tomatoes release a little juice, it mingles with the oil and vinegar, and suddenly you have a perfect, built-in dressing. Serve right away with a few extra basil leaves on top.
Why it works
This is simplicity doing a mic drop: zero fuss, big payoff. The textures play well together, the colors look like a holiday, and the flavors stay fresh and bright. Exactly the kind of thing I want when the weather is warm and patience is limited.
