Forget the usual syrniki—cottage cheese sticks with sour cream are lighter, creamier, and irresistibly crisp.

If you love syrniki but want a little crunch to go with that tender center, try this riff: instead of the usual rounds, we cut the dough into slim sticks. Sour cream goes straight into the mix for a soft, almost creamy middle, and a quick roll in breadcrumbs delivers a golden, crackly crust. Same comfort, new texture.

You will need

  • Flour — 220 g
  • Sour cream — 2 tbsp
  • Tvorog (cottage cheese/farmers cheese) — 350 g
  • Egg — 1
  • Sugar — 60 g
  • Baking powder — 1 tsp
  • Butter, softened — 15 g
  • Breadcrumbs — as needed for coating
  • Powdered sugar — optional, for serving
  • Vegetable oil — for frying

Make the dough

Start by smoothing out the tvorog: mash it thoroughly with a fork or blitz it briefly with a blender until you lose the obvious curds. Stir in the egg, sugar, and sour cream until the mixture looks even and glossy.

Whisk the baking powder into the flour, then add that to the bowl. Drop in the softened butter and work everything together. You are aiming for a tender, slightly sticky dough that still holds together.

Shape the sticks

Lightly flour your counter and turn the dough out. Divide it into portions and roll each one into a long rope. Coat the ropes in breadcrumbs, then slice them into neat sticks roughly 9–10 cm long. The breadcrumb coat should cling all around.

Fry to golden

Heat a skillet with a thin layer of vegetable oil. Fry the sticks over medium heat, turning so all sides pick up an even, deep golden color. They should feel set on the outside while staying soft inside.

Transfer to a paper towel to wick away extra oil. Dust with powdered sugar before serving if you want a touch of sweetness on top.
