The Turkish Dough That’s Ready When You Are: Non-Sticky, Never Sour, and Fridge-Fresh for 4 Days

I love a dough that minds its own business: five minutes to mix, lives happily in the fridge for days, and behaves on the counter like a pro. This one comes from Turkish home-cook tradition and checks every box. It works for hand pies, pizza, flatbreads, and, with a sugar bump, sweet rolls. It stays smooth, supple, and easy to handle, so you can skip flour-dusting the counter and keep things tidy.
What you need
- Warm milk — 100 ml
- Strongly carbonated mineral water — 100 ml
- Neutral vegetable oil — 60–100 ml
- Dry yeast — 7 g (or 15 g fresh)
- All-purpose wheat flour — 350 g (plus a little extra if needed)
- Salt — 1 tsp
- Sugar — 2 tbsp (use 4–5 tbsp for sweet bakes)
Mix it up
In a bowl, combine the sparkling water, warm milk, and oil. Stir in the salt, sugar, and dry yeast. Start adding the sifted flour gradually and mix until a soft dough forms. Plan for about 350 g of flour, but go by feel: you want a dough that holds together without feeling heavy.
Turn it out onto the counter and knead by hand until the surface turns smooth, elastic, and easy to handle. It should release cleanly from your hands.
Let it rise
Return the dough to the bowl, cover, and set it somewhere warm for about 1 hour 30 minutes. A low oven set to 50°C works if your kitchen runs cool. Once it has risen, punch it down and give it another 1-hour rest. After that, it is ready to shape.
Cold storage game plan
If you are not baking right away, cover the bowl snugly with plastic and move it to the fridge. It keeps well for 3–4 days and actually turns more elastic as it rests. When you are ready, pull out exactly what you need, shape it cold, and bake.
Why this dough behaves so well
Fresh yeast users: activate it first. Crumble it into the warm milk, add a spoon of sugar, stir, and wait 10–15 minutes until a foamy cap appears. Once it is nice and bubbly, proceed with the mix.
That sparkling water earns its keep. The carbon dioxide bubbles help the yeast lift the dough more enthusiastically, so the crumb bakes up lighter and airier. Choose a strongly carbonated bottle; the brand and mineral profile do not matter.
The generous oil (up to 100 ml) coats developing gluten strands, which keeps the dough silky and less grabby. That is why you can work on an unfloured counter. Trim the oil and you may bring some stickiness back.
Make it savory or sweet
The base is neutral by design, so it plays well with almost anything: mashed potato with mushrooms, braised cabbage, egg and scallion, or seasoned meat all fit. For sweet rolls or buns, simply take the sugar up to 4–5 tablespoons and carry on.
Plant-based swap
For a dairy-free batch, replace the milk with another 100 ml of sparkling water. Total liquid: 200 ml of bubbly. Same process, same friendly dough.
