Got half an hour and a craving for something rich you can actually spread like silk? This chicken liver pate is the move. The secret is a simple balance play: almost as much onion and carrot as liver. That ratio softens the flavor, builds natural sweetness, and keeps the texture plush. Bonus twist: you finish it two ways from the same base — one with butter, one with mayo — so everyone gets exactly the vibe they want.

What you need

  • Chicken liver — 1 kg
  • Onion — 500 g
  • Carrot — 400 g
  • Butter, softened — 100 g
  • Mayonnaise — 100 g
  • Garlic — 3 cloves
  • Ground black pepper — 1 tsp
  • Fresh herbs (parsley, cilantro) — 1 bunch
  • Vegetable oil — 50 g
  • Bay leaf — 1
  • Salt — to taste

How it comes together

Peel and finely chop the onions. Warm the vegetable oil in a wide pan over medium heat and cook the onions until soft and translucent. Grate the carrots on the large holes of a box grater and stir them in. Let the vegetables gently sweat a few more minutes until sweet and tender.

Meanwhile, bring a pot of salted water to a boil with the bay leaf. Cut the chicken livers into bite-size pieces and slide them into the simmering water. Cook until just done, skimming off any foam that rises.

Transfer the cooked liver to the pan with the onions and carrots. Add the finely chopped herbs, the minced garlic, and the black pepper. Cover and let everything mingle over low heat for about 15 minutes so the flavors round out.

Take the pan off the heat and process the mixture to a perfectly smooth paste. A blender gives you a glossy finish; a meat grinder works too if that is your preference. Aim for velvety.

Two finishes, two moods

Divide the warm pate base into two bowls. Fold the softened butter into one portion until fully absorbed and silky. Fold the mayonnaise into the other until equally smooth. Both versions land creamy and lush; the butter batch reads classic and luxurious, while the mayo batch leans extra plush and spreadable straight from the fridge.

Serve it up
