Ingredients

  • 1 can tuna in its own juice (about 185 g)
  • 2 medium tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 100 g leafy lettuce (mixed leaves or regular lettuce)
  • 3 hard-boiled eggs
  • 5-6 pitted olives
  • 1 tsp capers (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • About 1/4 tsp salt
  • Freshly ground black pepper

How to make it

1. Prep the greens. Rinse the lettuce, pat it completely dry with a paper towel, then tear it into large pieces. Tearing keeps the leaves juicy and gives you better texture. Spread the greens over the base of a serving dish or divide onto plates.

2. Chop the veg. Cut the tomatoes and cucumber into medium dice. Slice the red onion into thin half-moons. Scatter everything evenly over the lettuce so each bite gets a little of each.

3. Add the eggs and extras. Peel the hard-boiled eggs and slice them into quarters or neat wedges. Arrange them on top. Halve the olives and add them, along with the capers if you are using them.

4. Bring in the tuna. Drain off any excess liquid from the can. Flake the tuna gently with a fork into larger chunks and place it over the salad - bigger pieces keep that satisfying texture.

5. Whisk the dressing. In a small bowl, combine the olive oil, lemon juice, salt, and black pepper. Whisk until it looks smooth and glossy.

6. Finish and serve. Dress the salad right before it hits the table so the vegetables stay crisp. Toss lightly if you want everything mixed, or leave it layered for a more composed look.
