When you want an easy win for a crowd, roast pork loin is the move. Minimal fuss, big payoff: bronzed crust outside, juicy and tender inside. The spicy-sweet marinade does the heavy lifting, so you get full flavor without babysitting a pan.

What you need

  • Pork loin, whole piece - 1 kg
  • Soy sauce - 3 tbsp
  • Honey - 2 tbsp
  • Garlic - 4 cloves, minced or pressed
  • Hot red pepper, ground - 1/2 tsp (or to taste)
  • Paprika, ground - 1 tsp
  • Cumin (zira), ground - 1/2 tsp
  • Black pepper, ground - 1/4 tsp
  • Vegetable oil - 2 tbsp
  • Salt - 1/2 tsp or to taste (remember the soy sauce brings salt)
  • Fresh parsley - a few sprigs, for serving

How to make it

Mix the marinade

In a small bowl, combine soy sauce, honey, vegetable oil, garlic, hot red pepper, paprika, cumin, and black pepper. Stir until smooth. It already smells like dinner is going to be very good.

Marinate the pork

Pat the pork loin dry with paper towels. Set it in a deep dish and coat it thoroughly with the marinade on all sides. Cover and leave it to marinate 2 to 4 hours at room temperature, or overnight in the fridge for a deeper, rounder flavor. Turn the meat occasionally so the marinade soaks in evenly.

Roast to juicy

Heat the oven to 180°C. Transfer the loin to a roasting dish. If you have a rack that can sit over a baking sheet, use it so the heat can circulate and the crust forms all over. Roast 45 to 50 minutes, depending on the thickness of the piece.

To check doneness, pierce the meat with a knife: clear juices mean you are there.

Rest, slice, serve

Tent the pork loosely with foil and let it rest 10 minutes. This is where the juices redistribute and the texture gets even more tender. Slice, top with chopped fresh parsley, and serve hot.

What to serve with it

Mashed potatoes, roasted vegetables, or a fresh salad all play nicely with the sweet heat of the glaze. Simple sides keep the pork front and center, which is exactly where it belongs.
