Crisp, refreshing, nutrient-packed — the effortless cooking boom is sweeping kitchens, delivering big flavor in minutes.

This one ticks all my weekday boxes: crisp, refreshing, genuinely satisfying, and it comes together in minutes. The combo sounds quirky at first glance, but celery and pear play surprisingly well together. Blue cheese earns its keep, walnuts bring toastiness, and arugula keeps the whole thing bright and lively. Make it when you want a light, vitamin-packed lunch or an easy dinner that still feels intentional.

What you need

  • Celery stalks - 3 (about 150 g), thinly sliced
  • Firm pear - 1 (about 180 g), cored; peel if the skin feels tough
  • Arugula - 50 g
  • Walnuts - 30 g
  • Blue cheese (think gorgonzola) - 40 g
  • Olive oil - 2 tbsp
  • Lemon juice - 1 tbsp
  • Liquid honey - 1 tsp
  • Salt - a pinch
  • Freshly ground black pepper - a pinch

How to make it

Step 1: Prep the good stuff. Rinse and dry the celery, then slice it into thin half-moons. Wash the pear, remove the core, and peel if the skin feels tough. Slice thinly or cut into small cubes, depending on your texture mood. Toast the walnuts in a dry skillet until fragrant, then chop them coarsely.

Step 2: Build the base. In a large bowl, add the arugula, celery, and pear. Crumble in the blue cheese and scatter over the warm walnuts.

Step 3: Shake up the dressing. In a small jar or bowl, whisk together the olive oil, lemon juice, and honey until glossy and smooth. Season with a pinch of salt and black pepper. Pour over the salad and toss gently, keeping the arugula leaves and pear slices intact.

Serve right away for peak crunch and bright flavor. It is fresh, lively, and exactly the kind of salad that wakes up a weekday.
