The 10-Minute Spinach-Onion Cheese Melt That Will Change Your Lunch Game

Crunchy toast, melty cheese, sweet onion, tender spinach. It is the kind of hot sandwich you pull off in minutes and still feel slightly smug about. Bonus: spinach brings a vitamin boost, so this little comfort bite also does your body a favor.
What you need
- Whole-grain or sandwich bread - 4 slices
- Fresh spinach - 80 g
- Yellow onion - 1 small
- Firm cheese - 60 g
- Unsalted butter - 20 g
- Salt - a pinch
- Freshly ground black pepper - a pinch
How to make it
Start with the filling. Peel the onion and slice it into thin half-moons. Warm half the butter in a skillet over medium heat and gently sauté the onion until soft with a light golden edge, about 3-4 minutes. Aim for pale gold; that keeps the flavor soft and sweet.
Rinse the spinach well, pat it dry with a paper towel, and roughly chop it. Stir the spinach into the onion and cook for 1-2 minutes until the leaves wilt and shrink. Season with a pinch of salt and a crack of pepper. Take the pan off the heat and let the mixture cool slightly.
Grate the cheese on the coarse side of a grater. Heat the oven to 180 C. Lightly butter one side of each bread slice with the remaining butter and set them buttered side up on a baking sheet.
Spoon the warm spinach-onion mixture evenly over the bread. Top generously with the grated cheese. Slide the tray into the oven for 5-7 minutes, until the cheese fully melts and turns a little golden and bubbly on top.
Serve these hot for peak payoff. They sit nicely next to a light vegetable soup, a crisp green salad, or a strong cup of tea.
