The 10-Minute Sauce That Transforms Pasta Into a Restaurant-Worthy Meal
Humble spaghetti gets a gourmet makeover with quick, chef-smart tweaks that turn a pantry staple into a showstopper.
When a long day calls for pasta therapy, this silky cream sauce turns plain spaghetti into a restaurant-level situation with almost no drama. It is rich, fast, kid-approved, and built from fridge staples. If you can grate cheese and stir a pan, you can pull this off.
What you need
- Cream 20% fat — 200 ml (about 7 fl oz)
- Unsalted butter — 30 g (about 2 tbsp)
- Hard cheese such as Parmesan — 50 g, finely grated (about 1/2 cup packed)
- Garlic — 2 cloves, finely chopped
- Salt — to taste (about 1/2 tsp)
- Ground black pepper — a pinch
- Nutmeg — the tiniest pinch (just a dusting from the tip of a knife)
- Fresh parsley — a few sprigs, finely chopped, for serving
- Spaghetti — enough for your servings, cooked al dente
How to make it
Step 1: Get set. Peel and finely chop the garlic. Grate the cheese on the fine side so it melts smoothly. Rinse, dry, and chop the parsley.
Step 2: Wake up the garlic. Melt the butter in a small skillet or saucepan over medium heat. Stir in the garlic and cook 1 to 2 minutes until fragrant and just turning pale gold. Pull it before it browns, so the flavor stays sweet and mellow.
Step 3: Build the body. Pour in the cream and stir to combine. Let it heat until steaming and just under a simmer, then drop the heat to low. Cook 3 to 4 minutes, stirring steadily, until the sauce lightly thickens.
Step 4: Make it glossy. Sprinkle in the grated cheese, then add the salt, black pepper, and nutmeg. Stir until the cheese fully melts and the sauce goes smooth and velvety, about 1 to 2 minutes, keeping it moving so nothing sticks.
Step 5: Bring it together. Cook the spaghetti to al dente according to the package. Drain well, slide it into a warm bowl, and pour over the hot cream sauce. Toss so every strand gets a proper coat.
Serve it hot
Dish it up right away while the sauce is at peak silkiness. Finish with chopped parsley for a pop of green and a clean, fresh lift. That is it: weeknight pasta, dressed like it has a reservation.
