Swap the Skillet for the Waffle Iron: 10-Minute Cottage Cheese Waffles—Easier, Healthier, Kid-Approved
Syrniki, step aside: cottage cheese waffles are lighter, creamier, and need no extra oil.
If syrniki feel a bit same-old and cottage cheese by the spoon is a hard sell at your table, switch it up with tvorog waffles. Same pantry players, totally different vibe: crisp edges, tender middle, quick to make, and light on added fat. Bonus: kids tend to ask for seconds.
What you need (makes 6 to 8 waffles)
- Tvorog (5–9% fat) — 500 g
- Eggs — 3
- Flour — 200 g (about 1.5 cups if your cup is 250 ml)
- Sugar — 80 g (roughly 4 heaping tbsp)
- Butter — 50 g, melted
- Baking powder — 1 level tsp
- Salt — 1/3 tsp
- Vanillin — a pinch (the tip-of-a-knife kind)
How to make them
Blend the base: In a mixing bowl, combine the tvorog, eggs, sugar, and vanillin. Add the melted butter. Blitz with a blender until you have a smooth, unified mixture.
Dry meets wet: In a separate bowl, whisk together the flour and baking powder. Add this to the cheese mixture and stir until the batter is smooth and slightly glossy.
Heat and prep: Preheat your waffle iron or an electric grill and lightly grease the plates with oil.
Cook: Spoon about 2 tbsp of batter for each waffle. Cook until the waffles are evenly golden.
Serve: Go classic with sweetened condensed milk, pick a favorite jam, or keep it simple with a dusting of powdered sugar.
Why this swap works
You are using almost the same ingredients you would for syrniki, but the texture hits different: lighter, crispier, and quicker from bowl to plate. There is minimal added fat, and the result has that weekend-brunch energy without the fuss.
