- Potatoes — 10–12 medium, peeled
- Salt — 1 heaping tsp
- Dried rosemary — 1 tsp
- Vegetable oil — 3 tbsp
- Butter — 3 tbsp
- Ice — 200 g (about 7 oz)
- Cold water — 2 liters (about 2 quarts)
- Garlic — 2–3 cloves, finely chopped
- Black pepper — to taste
The one move that makes the crust
Cut the peeled potatoes into wedges and drop them into a pot with the cold water. Add the ice and the salt, then let the wedges sit for 5–7 minutes. That icy bath tightens the surface and pushes out excess starch, which is why the finished crust goes thin and crisp while the center stays tender.
Do not drain. Set the same pot over medium heat. Once the water hits a full boil, cook exactly 3 minutes. Drain well and let the potatoes steam off any extra moisture.

Heat the oven to 200°C (392°F). Pour the vegetable oil onto a rimmed baking sheet. Scatter in the dried rosemary and the chopped garlic. Lay the potato wedges on the sheet in a single layer.
