What you need

  • 300 g chicken breast, cooked (boiled or baked)
  • 200 g canned pineapple pieces
  • 150 g hard cheese
  • 2 hard-boiled eggs
  • 1 medium fresh cucumber
  • 80 g canned corn
  • 2-3 tbsp mayonnaise or Greek yogurt
  • Salt and black pepper
  • Dill or parsley, a few sprigs for garnish

How to make it

1. Cook the chicken first. Boil in lightly salted water until just done, about 20 minutes, or bake it if that is your style. Let it cool, then cut it into small, even cubes. Neat pieces make the salad look better.

2. Hard-boil the eggs for 8-10 minutes once the water starts to bubble. Cool them down, peel, and dice to match the chicken.

3. Rinse the cucumber. If the skin is bitter or thick, peel it; if not, leave it on for crunch. Dice into small cubes. Grate the cheese on the large holes of a box grater.

4. Drain the pineapple in a colander so the extra syrup does not water down the dressing. A quick pat with paper towel helps.
