Party-Perfect Pepper-Garlic Herb-Marinated Tomatoes That Upstage Any Salad

Here is the kind of tomato plate that disappears before everyone sits down. It is bright, garlicky, and wildly juicy, but the work is gloriously low-effort: 15 minutes to throw together, then a chill in the fridge. Think of it as a fresh, bell-pepper-and-herb marinade that turns firm, meaty tomatoes into something you want with everything—meat, crispy potatoes, or just a thick slice of good bread.
Ingredients
- Tomatoes (firm, meaty, ideally plum) - 1 kg
- Bell pepper - 4
- Garlic - 1 large head
- Parsley - small bunch
- Cilantro - small bunch (or swap in dill)
- Vegetable oil - 2-3 tbsp
- Vinegar 9% - 1-2 tbsp
- Sugar - 1 tsp
- Salt - 1 tsp, adjust to taste
How to make it
Start with the flavor base. Turn the bell peppers and the whole head of garlic into a smooth mash using a blender. A knife works too; the blender just gets you there faster.
Stir in the oil, vinegar, sugar, and salt. Taste and tune: you are aiming for a bold, salty, pleasantly tangy dressing that wakes up the tomatoes.
Finely chop the parsley and the cilantro (or dill) and fold the herbs into the dressing so it is fragrant and green-flecked.
Cut the tomatoes into thick wedges. In a deep bowl, build layers: a blanket of tomatoes, then a generous pour of the pepper-garlic dressing. Repeat the layering and finish with dressing on top so everything is well coated.
Cover and refrigerate for at least 5 hours; overnight lands the best depth and juiciness. The tomatoes will relax, and the bowl will fill with a vivid, savory-sweet juice.
