- White cabbage, thinly shredded - 500 g
- Canned beans, white or red, drained - 200 g (without liquid)
- Carrot - 1 piece (about 100 g), coarsely grated
- Onion - 1 piece (about 80 g), diced
- Tomato paste - 1 tbsp
- Vegetable oil - 2 tbsp
- Water or vegetable broth - 150 ml
- Salt - to taste
- Ground black pepper - a pinch
- Bay leaf - 1
- Fresh parsley - a few sprigs for serving
How to make it
Start with the prep. Shred the cabbage as thin as you can so it softens fast. Dice the onion and grate the carrot on the large holes.
Build the base. Warm the oil in a deep skillet or a small pot over medium heat. Cook the onion until translucent. Stir in the carrot and cook 3-4 minutes until it turns soft.
Add the cabbage. Tip in the shredded cabbage, toss to coat, cover, and let it steam-braise for about 10 minutes on medium heat until it slumps and starts to turn tender.
