What you need

Quinoa, 100 g (rinsed well and well-drained); water or milk, 250 ml (dairy or plant-based like almond or oat); 1 medium apple (tart-sweet works best); ground cinnamon, 1/2 tsp; honey or maple syrup, 1 tbsp (optional, for extra sweetness); a pinch of salt; butter or coconut oil, 1 tbsp; a handful of raisins or nuts for serving (optional); extra ground cinnamon and fresh apple slices for garnish.

How to make it

  1. Prep the quinoa: rinse it thoroughly in a fine-mesh sieve to wash away any bitterness, then let it drain well.
  2. Warm a small saucepan over medium heat and melt the butter or coconut oil. Add the quinoa and toast it for 1 to 2 minutes, stirring. It should smell nutty.
  3. Pour in the water or milk and add a pinch of salt. Stir, bring to a boil, then drop the heat to low. Cover and simmer for about 15 minutes, until the liquid is fully absorbed.
  4. While that cooks, peel the apple, remove the core, and cut it into small cubes.
  5. When the quinoa is almost done, stir in the diced apple and the cinnamon. Cover again and cook for 3 to 4 minutes. You want the apple tender but still holding its shape.
  6. Take the pan off the heat. If you like it sweeter, stir in the honey or maple syrup. Put the lid back on and let it rest for 2 to 3 minutes to settle.
  7. Spoon into bowls. Top with a few fresh apple slices, a light sprinkle of cinnamon, and a handful of raisins or nuts for extra texture and flavor.
