Tuna salad has a reputation for being predictable: egg, cucumber, onion, mayo, repeat. Good, sure. Memorable, not always. Matthew McConaughey has a version that actually wakes the thing up, and it has traveled far beyond Hollywood for a reason: crunchy chips and a jolt of wasabi. I keep the egg in here for anyone who loves that classic touch, but his take works perfectly without it.

Frozen green peas bring a firmer bite than canned peas, although either works. The chips and wasabi are the signature move here; they bring texture and heat that push the salad out of sandwich-filler territory. The dressing leans creamy and bright, and a little sweetness rounds it out. No agave syrup? Maple syrup or a pinch of cane sugar will do the same job.

Ingredients for 4 servings

  • Canned tuna, 250 g
  • Green peas (frozen or canned), 100 g
  • Egg, 1 (optional)
  • Pickled cornichons, 100 g
  • Apple, 1/2 (peeled and cored)
  • Red onion, 1/2
  • Canned baby corn (mini), 70 g
  • Potato chips, 10 g
  • Mayonnaise, 50 g
  • Wasabi, 5 g
  • Lemon, 1/2
  • White wine vinegar, 2 tsp
  • Agave syrup, 2 tsp
  • Salt and black pepper, to taste

How to make it

If using frozen peas, cover them with boiling water and let them sit while you prep. For the egg, cook it hard-boiled for 9–10 minutes, then cool it down in cold water.

Finely dice the red onion, cornichons, and the peeled, cored apple. If you can find cornichons in a dill brine, pick those; the herbiness works especially well here. No pickles around? Swap in fresh cucumbers, as long as they are firm and crunchy.

Drain the tuna and break it up with a fork. Stir in the juice of half a lemon, the white wine vinegar, mayonnaise, and wasabi until smooth and creamy.

Fold in the diced apple, onion, and cornichons, plus the canned baby corn. If you are including the egg, chop it and add it now. Drain the peas and stir them through.

Crush the potato chips by hand into rough pieces about 1.5 cm across and gently mix them into the salad. Season with the agave syrup, salt, and black pepper. Taste and adjust for brightness, heat, and sweetness.

The vibe you are aiming for: cool, creamy, bright, and just spicy enough, with those chips staying snappy right up until serving. Serve it straight up, pile it onto toasted bread, or spoon it into crisp lettuce cups if you want to pretend this is a salad-salad.
