I Can’t Stop Making These Crispy Onion Breadsticks — Your Soup’s New Best Friend

That shattering little crunch you hear from the next room, the kind that makes you wander into the kitchen on autopilot? These onion breadsticks deliver exactly that. They come out crisp on the outside, soft inside, big on aroma, and they do it with pantry basics. Easy to bake, easy to pack for a picnic, and the kind of snack both kids and adults treat like a personal victory. I will always vote yes on onion-bread anything.

What you need

  • Wheat flour - 250 g
  • Warm water - 150 ml
  • Dry yeast - 5 g (about 1 tsp)
  • Yellow onion - 1 small (about 80 g)
  • Vegetable oil - 2 tbsp
  • Sugar - 1 tsp
  • Salt - 0.5 tsp
  • Sesame seeds - 1 tbsp, optional, for topping
  • Egg - 1, for brushing

How to make them

Step 1: Wake up the yeast. Stir the sugar into the warm water, sprinkle in the yeast, gently mix, and leave it for 10 to 15 minutes until a foamy cap forms. That foam is your green light.

Step 2: Build the flavor base. Finely chop the onion and sauté it in the vegetable oil over medium heat until golden with a hint of caramelization. Let it cool slightly so it does not steam the dough.

Step 3: Mix the dough. In a large bowl, combine sifted flour and salt. Make a well, pour in the activated yeast, and add the sautéed onion along with its oil. Knead until the dough turns smooth, elastic, and releases cleanly from your hands. Sprinkle in a bit more flour only if the dough feels overly sticky. Cover and let it rise somewhere warm for 1 to 1.5 hours, aiming for roughly double in volume.

Step 4: Shape. Gently deflate the dough and cut it into small portions. Roll each piece into a thin, long stick. Set them on a parchment-lined baking sheet with a little space in between. Let them rest for 20 minutes so they relax and get a head start on oven spring.

Step 5: Bake. Heat the oven to 180 C. Lightly beat the egg and brush it over the breadsticks. If you feel like it, sprinkle sesame seeds on top. Bake for 15 to 20 minutes until they turn a rich golden color and the kitchen smells like you own a bakery.

Serve warm for maximum crackle. They partner well with soup, dips, or, if you are me, a plain cup of tea and a quiet corner. They travel well too, so tuck a few into your picnic basket and act surprised when they vanish first.
