Ditch the Standard Cottage Cheese Casserole—This Breakfast Bake Is Creamier, Tastier, and Keeps You Full Twice as Long
A humble pantry staple is the secret to a cottage cheese casserole that’s richer, creamier, and far more filling.
You know that classic cottage cheese bake that tastes great but sometimes feels a little too airy for real life? Fix it with rice. Soft, tender grains tucked into the curd turn the whole thing into a proper meal with almost no extra work. It stays creamy, gets a gentle bite, and feeds a crowd. Breakfast, low-effort dinner, or a cold slice from the fridge — all fair game.
What you need
- Rice (round-grain or long-grain) — 150 g (3/4 cup)
- Water — 400 ml (2 cups)
- Salt — a pinch
- Cottage cheese — 400 g
- Sugar — 50 g (2-3 tbsp)
- Eggs — 3 whole + 1 extra yolk
- Milk — 1 tbsp
- Raisins — 80 g
How to make it
Cook the rice in lightly salted water on low heat until tender, about 20 minutes. Drain if needed and let it steam off for a minute.
In a mixing bowl, combine the cottage cheese, sugar, a pinch of salt, and 3 whole eggs. Blend until smooth and even. Keep the extra yolk aside for brushing later.
Rinse and pat the raisins dry. Fold the cooked rice and raisins into the cottage cheese mixture until everything looks evenly spread out.
Line a baking dish with parchment and scrape in the mixture. Stir the reserved yolk with the tablespoon of milk and brush it over the top for that shiny, golden finish.
Bake at 180°C for 35-40 minutes until the surface turns a deep golden color and the center feels set.

Any rice works here — the point is softness. If you already have cooked rice, use about 1.5 cups.
Go with any cottage cheese fat level you like. Grainy curd? A quick blend or a pass through a sieve gives you that silky texture.
Raisins are the classic move, but dried apricots, dried cranberries, or fresh/frozen berries are all great swaps.
