The trick is simple: bloom saffron in oil, coat the grains so they drink up the flavor, then add liquid in small waves. A freezer-friendly mix of bell pepper, corn, onion, and carrot goes in at the end, so dinner keeps moving fast.
What you need
- Arborio rice: 200 g (use dry, unrinsed)
- Frozen vegetable mix (bell pepper, corn, onion, carrot): 200 g
- Saffron (powder or threads): 2 pinches
- Fresh cilantro (or parsley): 1 bunch
- Salt and black pepper: to taste
- Vegetable oil: for the pan
- Water or broth: about 400-500 ml
How to make it
Heat a wide skillet over medium with a light coat of oil. Stir in the saffron and let the oil turn a deep golden hue. Saffron is potent, so two pinches deliver plenty of color and fragrance.
Pour in the dry rice and stir so every grain gets glossed in the saffron oil and picks up that yellow shine.
Add 100-150 ml of water (or broth) and bring to a boil, then settle the heat to medium. Let it cook mostly undisturbed. As the liquid reduces, add small splashes to keep the rice moving toward tender. Count 18 minutes total from the first boil.
Five minutes before the clock runs out, add the frozen vegetable mix straight from the freezer. It will heat through as the rice finishes. Give the pan one gentle stir to distribute the vegetables.
When only a little liquid remains, season with salt and pepper.
As soon as the liquid has cooked off and you catch a light popcorn aroma, turn off the heat. Cover the skillet tightly with foil, seal the edges, and let it rest for 5 minutes so the grains relax into that ideal, tender texture.
