If your idea of comfort is a plate that warms the soul and shuts up a hungry stomach, these meat-and-cheese ravioli will get it done. The dough is silky, the filling is juicy, and the whole thing feels like a tiny holiday on a random Tuesday. Yes, it is homemade pasta. Yes, it is absolutely worth it.

What you need

  • Wheat flour — 300 g
  • Eggs — 3
  • Olive oil — 1 tbsp
  • Water — 2 tbsp
  • Ground beef (or a beef-and-pork mix) — 250 g
  • Hard cheese (Parmesan or similar) — 100 g
  • Onion — 1 small
  • Garlic — 1 clove
  • Salt
  • Ground black pepper — a pinch
  • Nutmeg — a pinch
  • Tomato sauce or tomato paste — for serving
  • Fresh parsley — a few sprigs for garnish

How to make it

1. Mix and rest the dough. In a bowl, combine the flour, 2 eggs, olive oil, and water. Knead until you have a smooth, elastic dough that feels supple rather than sticky. Wrap it up and let it relax at room temperature for 30 minutes so it rolls out like a dream.

2. Build the filling. Finely chop the onion and garlic. Sauté them in a skillet until the onion turns translucent. Add the ground meat, break it up, and cook it through. Season with salt, a pinch of black pepper, and a pinch of nutmeg. Let the mixture cool. Grate the cheese on a fine grater and stir it into the cooled meat.

3. Shape the ravioli. Roll the rested dough into a thin sheet, about 2 mm thick. Cut it into squares about 6–7 cm wide. Beat the remaining egg. Place a teaspoon of filling in the center of half the squares. Lightly brush the edges with the beaten egg, cap each with a second square, press the edges firmly, then crimp around the perimeter with a fork for a tidy seal and a classic look.

4. Cook gently. Bring a large pot of salted water to a lively boil. Drop in the ravioli in batches. Once they float, give them 3–4 minutes. Lift them out with a slotted spoon so they stay intact.

Serve it up

Spoon over warm tomato sauce, shower with grated cheese, and finish with fresh parsley. Eat hot. Smile immediately.
