What you need
- Cottage cheese 5% fat - 400 g
- Fresh peaches - 3 medium (about 300 g)
- Eggs - 2
- Sugar - 80 g (adjust to taste)
- Semolina - 30 g
- Vanilla sugar - 1 tsp
- Butter - 15 g (for greasing the baking dish)
- Ground cinnamon - a pinch (optional)
- Sour cream 15% - 2 tbsp (for brushing the top)
How to make it
Start with the cottage cheese. If it is on the chunky side, push it through a sieve or blitz it with a blender until smooth. In a mixing bowl, combine the cottage cheese, eggs, sugar, and vanilla sugar. Beat until the mixture looks even and creamy. Stir in the semolina and mix well, then let the batter rest for 10 to 15 minutes so the semolina can swell. That short pause gives you a more structured, pleasantly set crumb later.
While the batter rests, rinse the peaches, remove the pits, and slice them into neat 5 mm wedges. Grease your baking dish with the butter.
