If you want something cozy and a little dressy without turning dinner into a project, make chicken-and-mushroom julienne. It is classic for a reason: tender chicken, fragrant mushrooms, a silky cream sauce, and a golden, slightly crisp cheese lid. It looks like you tried hard; you did not. The oven does the heavy lifting so everything heats evenly, flavors meld, and the cheese becomes that ideal bronzed cap.
What you need
- Chicken fillet - 300 g
- Fresh button mushrooms - 250 g
- Yellow onion - 1 small (about 80 g)
- Heavy or table cream 20% - 150 ml
- Firm cheese - 100 g
- Butter - 30 g
- All-purpose flour - 1 tbsp
- Salt - to taste
- Black pepper, ground - a pinch
- Nutmeg - a pinch
How it comes together
1. Prep first: cut the chicken into small cubes. Slice the mushrooms thin. Dice the onion small. Heat a skillet over medium, melt half the butter, and sauté the chicken until lightly golden, about 5–7 minutes. Transfer to a plate to rest.
2. Same pan, remaining butter. Soften the onion until translucent. Add the mushrooms and cook off their moisture completely; keep going until they take on a light golden color. Return the chicken to the pan, season with salt and black pepper, sprinkle in the flour, and stir well. Cook 1–2 minutes to take the raw edge off the flour.
3. Pour in the cream, add a pinch of nutmeg, and fold everything together gently. Let it simmer on low 2–3 minutes until the sauce lightly thickens. Taste and adjust seasoning.
4. Heat the oven to 180 C. Spoon the mixture into cocottes or small ceramic ramekins. Grate the cheese on the large holes and blanket the tops generously. Bake 15–20 minutes, until the cheese is fully melted and the surface is golden.
Serve it hot
Bring the julienne to the table straight from the oven. It plays nicely with a light green salad or crisp fresh vegetables.
My test-drive
I made this in the oven and immediately got why people love it: the smell alone pulled everyone into the kitchen before the timer buzzed. The end result hit exactly where I wanted it to: juicy mushrooms, supple chicken, a velvety cream sauce, and that glossy, golden cheese crown. Served piping hot, it basically begged for a second scoop.
Helpful tip
Keep the sauté gentle. A light blush on the chicken and mushrooms is enough before baking, so the filling stays tender. Use cream at 20% or higher for a richer, silkier sauce. And for a perfect top: cover the dishes with foil for the first 15 minutes, then remove the foil and let the cheese take on color for another 5–7 minutes without burning.
