4-Minute Cheesy Sausage Omelet Pockets That Beat Pancakes, No Fuss Required
Beat the rush: one pan, five minutes, zero stress—an everyday breakfast fix poised to rescue your mornings.
My weekday breakfast backup: an egg pancake folded around melty cheese and a little sausage. It cooks fast, looks a bit dressy, and asks for almost zero brain power. Think: easier than making crepes, but with that hey-I-tried presentation.
What you need
2 eggs; about 50 g hard cheese, grated; about 50 g cooked sausage (the simple boiled kind), grated on the large holes or finely diced; a small bunch of herbs (dill, parsley, or both), finely chopped; salt and black pepper to taste; a little vegetable oil for frying.
How to make it
- Whisk the eggs with a pinch of salt, a few grinds of pepper, and the chopped herbs.
- Heat a skillet over medium and add a thin film of oil. Pour in the egg mixture and tilt the pan so it coats the bottom.
- Cook on medium until the underside sets and the top just starts to firm up.
- Cover the surface with the grated cheese and the sausage (grated or finely chopped, your call).
- Fold the edges toward the center to make an envelope, flip gently, and cook another 1-2 minutes until the outside turns golden and lightly crisp.
- Serve hot.
The egg layer stays pretty neutral; the filling does the heavy lifting. End result: a satisfying, low-effort breakfast that beats standing over a stack of pancakes and still looks a little special.
