This one hits that sweet spot: quick-seared veal steaks, bright asparagus, and a gentle drift of mozzarella that melts just enough to feel fancy without turning gloopy. It is clean, satisfying, and it gets from pan to plate before you have time to second-guess opening a bottle of red.

Veal brings lean, tender richness with plenty of protein and iron. Asparagus keeps the plate fresh and light, and mozzarella adds a creamy note that rounds everything out instead of weighing it down. The whole thing tastes composed, not complicated.

What you need

  • Veal steaks - 2 pieces (about 200 g each)
  • Fresh asparagus - 200 g
  • Mozzarella (small balls or slices) - 100 g
  • Olive oil - 3 tbsp
  • Garlic - 2 cloves
  • Lemon juice - 1 tbsp
  • Salt
  • Freshly ground black pepper - a pinch
  • Fresh thyme - 2-3 sprigs, optional

How to make it

Prep the steaks: Rinse and pat the veal dry, then season both sides with salt and black pepper. A dry surface and simple seasoning help you get that deep, flavorful sear fast.

Sear: Heat 1 tbsp olive oil in a skillet over medium-high. Sear the steaks for 3-4 minutes per side until browned and just cooked to your preference. Pull them to a plate, cover loosely with foil, and let them rest 5-7 minutes so the juices settle back in.

Asparagus time: Rinse the asparagus and snap or trim off the tough ends. In the same skillet, add the remaining olive oil. Toss in the minced garlic and cook about 1 minute until fragrant, not browned. Add the asparagus, splash in the lemon juice, season with salt and a pinch of pepper, and sauté 5-7 minutes, turning now and then. You are aiming for tender with a bright green snap, not limp.

Finish and plate: Arrange the asparagus next to the rested steaks. Scatter the mozzarella over the warm asparagus so it softens and just starts to melt. Tuck in a few sprigs of fresh thyme if you want a gentle herbal lift.

Serve it

Serve hot. I like it with a very simple fresh salad on the side and a glass of red wine. It tastes like a splurge and cooks like a weeknight. No drama, just a good plate of food.
